Vegetable Paninis with Garlic Basil Mayo
I really wanted to participate in the Recipe Box Swap this month and planned to share these yummy sandwiches but I don't have a picture of them. Sometimes trying to stop everyone from eating so I can take a picture is just, well you know what I mean, don't you. Anyway, just imagine a nice crusty square Ciabatta bread stuffed with veggies and melty cheese oozing out the side.
Veggie Paninis
Yellow Onion - Mushrooms - Zucchini - Red, Yellow and Green Peppers - Tomato slices
Ciabatta Loaf or individual Ciabattas
Havarti Cheese
I slice the veggies so that they will fit on sandwich and use whatever you like, the above is what we like (minus the shrooms, my girls hate them,i love them). I use my cast iron skillet and saute veggies with a little olive oil, salt and pepper. You can add a few tsp of balsamic vinegar too if you like. After veggies are tender set aside. I saute the Zucchini separate so they don't get mushy. I cut a medium Zucchini in half and then make about 1/4 inch thick slices and fry on each side in skillet until tender but not mushy. Set aside.
Garlic Basil Sauce (YUMMY)
2 or 3 TBS of Mayo
Same amount of Sour Cream
1 or 2 cloves garlic minced
2 or 3 TBS of fresh Basil, chopped
salt and pepper to taste
Assemble your Sandwich:
I put a thin layer of Havarti on each side of the bread, sort of the glue to keep things from falling out. Put veggies on and tomatoes, you can either put a little of the mayo on now or after you fry sandwich. I sprinkle a bit of olive oil on each side of my bread before adding anything (probably should of put that first, sorry, but you don't have to put the oil) Close up your sandwich and rub a few drops of olive oil to the outside of your bread, place in skillet. I use my other cast iron skillet (really heavy) to place on top of sandwich and press on it a few times while frying, when brown flip and cook the other side. Let it cool for a couple minutes before slicing and eating.




I love paninis. I'll definitly have to try this recipe. Happy 4th!
